Butter Biscuits

The Only Recipe You’ll Ever Need
Some recipes you find on the internet. Some recipes you stumble across in a cookbook. And then there are the special ones, the ones that get passed from person to person, kitchen to kitchen, generation to generation, because they are just that good. This is one of those recipes.
I honestly couldn’t even tell you exactly where this recipe started or who first made it. What I know is that it made its way to me, and now it lives in my kitchen permanently. These butter biscuits are a family classic and an absolute favorite in our house, and I mean that in the most serious way possible. You cannot eat just one. It is genuinely not possible. I have tried.
In fact, biscuits are such a big deal around here that we have an official tradition built around them. Every single Saturday morning, Biscuit Saturday. I make a big batch, pile them on a plate, and everyone digs in. Some people want butter and jelly. Some want gravy. Some just eat them plain and warm straight from the pan. There is no wrong way. There is just the biscuit, and the biscuit is everything.
Whether you’re making these for a lazy Saturday morning, a holiday breakfast, a weeknight dinner side, or just because you deserve something really delicious today, this recipe is for you. Once you make homemade butter biscuits from scratch, the store bought ones just won’t cut it anymore. Fair warning.
The Night Before — Don’t Skip This!
Put your two sticks of butter in the freezer the night before you plan to make these. I know it sounds like a small thing but it is absolutely everything. Cold frozen butter is what creates those beautiful flaky layers that make a biscuit a biscuit. Set a reminder on your phone if you need to. Future you will be so glad you did.
Let’s Make It
When you’re ready to bake, mix together your flour, baking powder, salt, and sugar in a large bowl.

Now pull that frozen butter out of the freezer. Using a cheese grater, grate one stick directly into the flour mixture and toss it around to coat. Then grate the second stick in. You can also use a fork or a pastry butter cutter to work the butter in if you prefer. Those little cold butter pieces are what create the magic, all those flaky layers you see when you pull a biscuit apart.

Add your 2 cups of cold milk and mix together with a spoon until just combined. The dough is going to look shaggy and feel sticky, that is completely normal and exactly what you want. The most important thing I can tell you is do not over mix. Once it comes together, stop. Over mixing makes tough biscuits and we are not doing that.

Turn the dough out onto a well-floured surface and flour the top of the dough too. Gently press it down and then fold it over on itself 5 to 6 times. This folding is how you build those gorgeous flaky layers. It doesn’t need to be perfect — just fold, press, fold, press, and don’t overthink it.

Once you’ve got it to about an inch thick, use a round cup or cookie cutter to cut out your biscuits. Press straight down and do not twist, twisting seals the edges and keeps them from rising as beautifully.

Place them close together in your pan.

Bake at 425°F for 15 minutes until golden and perfect.

Tips From My Kitchen to Yours
Move quickly. The whole secret to a great biscuit is cold butter. The longer you work the dough, the warmer everything gets. Work fast, get them in the oven, and let the heat do the rest.
Don’t over mix. Shaggy and a little rough is exactly right. The moment it comes together, your job is done.
Flour everything. Your surface, your hands, the top of the dough, your cutter. This dough is sticky and flour is your best friend here.
Keep it cold. Cold butter, cold milk, cold everything.
That’s the secret to flaky layers.
These freeze beautifully! Make a big batch and freeze the extras. Pop them in the oven whenever you need a warm biscuit and they come out just as good. Honestly a game changer for busy mornings.
Biscuit Saturday is a tradition in our house and after you make these once, I have a feeling it might become one in yours too. Warm, buttery, flaky biscuits fresh from the oven, there really is nothing better.
…and that’s all we did today.
