Chia Seed Pudding

One time I heard chia seeds were good for your gut, so I went for it. Now every couple months I get on a chia seed pudding kick. Simple ingredients. Real food. Something that feels a little fancy but takes almost no effort. Something you can meal prep, customize endlessly, and feel genuinely good about eating. Chia seed pudding checks every single one of those boxes and then some.
I have been making this alongside my overnight oats for a long time now, and honestly some weeks I cannot decide between the two, so I just make both. Sunday night I line up my jars, make a batch of overnight oats AND a batch of chia pudding, and have variety all week long. Different textures, different vibes, and the same effortless grab-and-go morning energy. That is the meal prep life, and I love it.
If you have never had chia seed pudding before, let me tell you what to expect. Chia seeds absorb liquid overnight and transform into this thick, creamy, almost tapioca-like pudding texture that is so satisfying and filling. It is naturally high in protein, full of fiber, and keeps you full for hours. And when you top it with fresh fruit and a drizzle of honey, it feels like you are eating something from a fancy brunch cafe when really you made it in your kitchen in about three minutes the night before.
This is the kind of recipe that makes you feel like you have your life together. And sometimes that is exactly what we need.
Let’s Make It
Grab your favorite glass jar or container; a mason jar works perfectly and looks beautiful too. Add your chia seeds, Greek yogurt, milk, honey, cinnamon, and vanilla all together. Put the lid on and shake it up really well until everything is fully combined.

Pop it in the refrigerator for at least 4 hours or overnight. The chia seeds need time to absorb the liquid and do their thing, and the longer they sit, the thicker and creamier the pudding gets. Overnight is my preference because it is ready and waiting when I wake up and the texture is absolutely perfect.
In the morning, dump it into a bowl or eat it straight from the jar; both are completely valid choices depending on how much of a rush you are in, and pile on all your favorite toppings.
That is three minutes of work the night before for a breakfast that feels like a treat every single morning. I will never stop being amazed by that.

Topping Ideas — This Is the Fun Part
Do not skip the toppings. They take this from good to absolutely incredible, and they are what make every jar feel fresh and different even when the base is the same.
- Fresh fruit — strawberries, blueberries, raspberries, mango, banana, kiwi—anything goes, and the brighter and more colorful the better.
- Granola — adds the most satisfying crunch on top of that creamy pudding. Add it right before eating so it stays crispy.
- Drizzle of honey or maple syrup — a little extra sweetness that takes it over the top.
- Nut butter — a swirl of peanut butter or almond butter on top is incredible and adds protein and healthy fats to keep you full even longer.
- Coconut flakes — toasted or plain coconut on top of chia pudding is such a good combination.
- Chopped nuts — walnuts, pecans, almonds—add crunch and nutrition.
- Cacao nibs or chocolate chips — because sometimes breakfast deserves a little chocolate and nobody is here to judge. More cinnamon—a little extra sprinkle on top right before eating is always a yes from me.
Flavor Variations to Try
Just like overnight oats, this base recipe is endlessly flexible. Here are some of my favorite versions:
- Strawberry Vanilla — fresh strawberries on top with extra vanilla in the base. Classic and beautiful.
- Mango Coconut — coconut milk instead of regular milk and topped with fresh mango. Tropical and absolutely dreamy.
- Chocolate — add a tablespoon of cocoa powder to the base and top with sliced banana and a drizzle of peanut butter. Tastes like dessert.
- Peanut Butter Banana — swirl peanut butter right into the base and top with sliced banana and honey. So filling and my husband’s favorite!
- Blueberry Lemon — add a little lemon zest to the base and top with fresh blueberries. Bright and fresh and perfect for spring and summer mornings.
- Apple Cinnamon — double the cinnamon in the base and top with diced apple and a drizzle of maple syrup. Fall in a jar.
- Berry Parfait — layer the chia pudding with granola and mixed berries in a tall jar for something that looks like it came straight from a restaurant. Perfect for when you want to feel a little extra on a regular Tuesday.
Tips From Your Mom Bestie
Shake it really well. Make sure everything is fully combined before it goes in the fridge. Chia seeds like to clump together at the bottom if you do not mix them in thoroughly. Give it a really good shake and then check it after about 10 minutes and give it another stir to break up any clumps before they set.
Use any milk you love. Almond milk, oat milk, coconut milk, whole milk, 2%—all of them work, and each one gives a slightly different flavor and richness. Coconut milk makes the creamiest, most indulgent version if you want to treat yourself.
Make a whole week at once. Line up five jars on Sunday night, fill them all, shake them all, and refrigerate them all. Five mornings of breakfast handled in under ten minutes. That is the goal, and this recipe makes it so easy.
The longer it sits, the better. Four hours is the minimum, but overnight is where the magic really happens. The texture gets thicker and creamier and more pudding-like the longer those chia seeds have to absorb the liquid.
Add toppings in the morning. Keep your toppings separate and add them right before eating. especially anything crunchy like granola or nuts. This keeps everything the right texture and makes each morning feel fresh.
These keep in the fridge for up to 5 days. Make your full week batch on Sunday, and you are set. Grab and go every single morning without a second thought.
Play with the ratios. Want it thicker? Add a little more chia seeds. Want it thinner and more drinkable? Add a splash more milk. This recipe is completely yours to adjust until it is exactly what you love.
Food that you can feel good about putting on the table or grabbing out of the fridge on a busy morning.
That is what this kitchen is all about, and I am so grateful you are here for it.
…and that’s all we did today.

Fantastic recipe, just play around with ingredients until you find what you like. I tried almond extract for fun and I really like it. I might try lemon extract next!
