I tried an egg bite one time and decided it needed to become my entire personality. That is genuinely what happened, and I have zero regrets about it.

I have now made probably 15 different varieties of egg bites. Maybe more. I have lost count honestly. Every week I am in the kitchen on Sunday making a big batch, and every week my family devours them before Wednesday. They are protein-packed, endlessly customizable, kid-friendly, and meal-prep-friendly, and they have become one of those things that my kids specifically ask for by name every single week. When your kids are requesting something healthy for breakfast, you do not question it. You just keep making it.

This recipe has also become one of those things I am kind of known for in my circle. People see me making them every week and ask how I do it, and the answer is always the same: it is so much simpler than it looks. The water bath sounds fancy and technical, but I promise you it is not. It is just water in a pan, and it makes all the difference in the world for that creamy, custardy texture that makes a great egg bite a great egg bite.

If you are not meal prepping egg bites on Sundays yet, this is your sign to start. Protein for the whole family, grab-and-go breakfast all week, and you only have to make them once. That is the dream, and we are living it.

That is your base. Everything else is up to you. The cottage cheese blends completely smooth and adds the most incredible creamy texture without any cottage cheese flavor, if that is something that worries you; I promise you will not taste it. It just makes them rich and fluffy and absolutely perfect.

Let’s Make It

Preheat your oven to 350°F.
Spray your silicone muffin pan generously with cooking spray. A silicone muffin pan is really important here; it makes getting the egg bites out so much easier and cleaner than a regular metal pan.

Now add your toppings directly into each muffin cup first; whatever vegetables, meats, or mix-ins you are using go in the bottom of each cup before you add the egg mixture. Do not blend your vegetables into the egg mixture; add them directly to the pan so they stay in nice, distinct pieces and do not get lost in the blend.

Making homemade Egg Bites

Add your 12 eggs, cottage cheese, any shredded cheese you want, and your seasonings to a blender. Blend everything together until completely smooth and frothy with no lumps or clumps. You want it really well blended here; that frothy smooth blend is what gives you that creamy custardy egg bite texture.

Pour your blended egg mixture over your toppings in each muffin cup, filling them about ¾ or more of the way full. They will puff up a bit as they bake.

Now here is the most important step — the water bath. Place your silicone muffin pan on a large baking sheet and slide it into the oven. Then carefully pour water onto the baking sheet until it reaches the bottom of the muffin pan. This steam that the water creates as it bakes is what gives your egg bites that gorgeous creamy, custardy texture instead of rubbery, dense eggs. Do not skip this step. It sounds fancy, but it is just water in a pan, and it changes everything.

Pouring water in the oven while baking egg bites

Bake at 350°F for 30 to 45 minutes depending on your oven. I pull mine right around the 35-minute mark with my gas oven but start checking at 30. You want them set in the center with no jiggly liquid egg left, but you do not want them overcooked and rubbery. They will continue to set slightly as they cool.

Let them cool for a few minutes before popping them out of the silicone pan. They slide right out beautifully.

Topping and Flavor Combinations to Try

Remember — add these directly to the muffin cups before pouring in your egg mixture:

  • Classic Bacon and Cheddar — crumbled cooked bacon and shredded cheddar. The one that started it all and is still a weekly favorite.
  • Spinach and Feta — fresh spinach and crumbled feta cheese. Feels fancy and takes about 30 extra seconds.
  • Ham and Swiss — diced ham and shredded Swiss cheese. Kid approved every single time.
  • Veggie Loaded — diced bell pepper, onion, mushrooms, and spinach. Pack those vegetables in and feel great about it.
  • Sausage and Pepper — cooked crumbled sausage and diced bell pepper. Hearty and filling and perfect for busy mornings.
  • Everything Bagel — everything bagel seasoning mixed right into the egg blend with cream cheese crumbles on top. Unreal.
  • Caprese — cherry tomatoes and fresh mozzarella with a little basil. Elegant and delicious.
  • Southwest — black beans, corn, diced jalapeño, and pepper jack cheese. Add a little cumin and chili powder to the egg blend.
  • Pizza Style — mini pepperoni and mozzarella with a tiny bit of Italian seasoning in the egg blend. My kids go absolutely wild for these.

Tips From Your Mom Bestie

A silicone muffin pan is non-negotiable. Metal pans make getting egg bites out a nightmare. Silicone releases them perfectly every single time. It is worth having one just for this recipe.

Blend it really well. You want that egg mixture completely smooth and frothy. A well-blended mixture equals a creamy, custardy egg bite. A lumpy mixture equals a lumpy result. Give it a good 30 to 60 seconds in the blender.

Add toppings to the pan first. Not in the blender — directly in the cups. This keeps your vegetables and mix-ins in distinct pieces instead of being blended into the egg mixture.

Do not skip the water bath. Water in the baking sheet, muffin pan sits on top, and the oven does the rest. It takes 10 extra seconds and gives you egg bites that are creamy and custardy instead of rubbery and sad. Worth it every single time.

Reheat perfectly in the microwave. Pop one or two in the microwave for about 30 to 45 seconds, and they are warm and ready to eat. Perfect for grabbing on the way out the door.

These freeze beautifully. Make a double batch, freeze half, and pull them out as needed. Microwave straight from frozen for about 60 to 90 seconds. Meal prep magic.

Season your egg blend well. Salt, pepper, garlic powder, and onion powder are my go-to base seasonings in the egg blend. Season to taste, and do not be shy about it — eggs need seasoning or they taste flat.

One Sunday batch of egg bites and your whole week of breakfasts is handled. Protein for the kids, protein for you and your husband, grab-and-go convenience every single morning, and a recipe with endless variety so it never gets boring. This is exactly what meal prep is supposed to feel like.

…and that’s all we did today!

  1. We’ve been making these for a little over a month now. They are a staple and we love them and all the variety you can add. We made the bites a couple times and have just started making egg sheets in a baking tray but using the same recipe and methods. They’re amazing.

This is THE egg bite recipe! I tried making egg bites with my regular muffin tin…threw the tin away rather than clean out the egg. Tried to skip the water bath in my silicone muffin tin…regrets. Do exactly as Cyndi says 😂💗

  5. I thought I saw you cook the egg bites in a waterbath. Is that correct? I want to try them, they sound good.
    Thank you.

My daughter absolutely LOVES these! She could eat eggs every meal every day so making these and having them available for her to pop in the microwave has saved my life! 🤣

  7. Hi, Thanks for the recipe. How do you recommend I reheat them after they’ve been in the fridge or freezer? Thanks!

Texture was great! I’ve never done a water bath before and also never added cottage cheese to them before. These things together make these egg bites though! Brilliant!

Delicious! First time making egg bites. The water bath was the hardest part (ie not spilling it when I took it out of the oven and when I had to dump the tray). I bought the silicone muffin tins that were recommended and they are a game changer!! I used Canadian bacon, yellow pepper, red onion, plus garlic powder, onion powder, salt and pepper.
