You already know how much I love my butter biscuits. If you haven’t made them yet, stop everything and go check out that recipe first (link to butter biscuit recipe here), because that recipe is the foundation of everything happening in this post and you are going to want it in your life.

But one morning I looked at my biscuit dough and thought.  what if I put a sausage in there? And just like that, a new breakfast favorite was born in our house.

This is truly one of the simplest, most satisfying grab and go breakfasts I make. No plate needed, no fork, no fuss. Just a warm, flaky, buttery biscuit wrapped around a juicy sausage link. My kids can grab one on the way out the door, I can eat one on the way to school drop off, and everyone is happy and fed. That is the dream, right?

Let’s Make It

Make your butter biscuit dough exactly as written in the original recipe. Same ingredients, same process, same rules, keep that butter cold and don’t over mix! The only thing that changes here is the shape. Instead of cutting your dough into circles, you are going to cut it into rectangles. Make them large enough to wrap around your sausage link so it’s tucked in nice and snug.

Place a cooked sausage link in the center of each rectangle, wrap the dough around it a bit.

Place them close together in your pan, just like with the regular biscuits, being close together helps them rise up nice and tall.

Wrap sausage in dough on a pan

Bake at 425°F for 15 minutes until golden and perfect. Same as the original biscuit recipe!

Why This Works So Well

These are everything you want in a breakfast on a busy morning. Filling, portable, warm, and delicious. No syrup, no dishes, no sitting down required. You can wrap them in foil or parchment and they travel like a dream.

Make a big batch, pop the extras in the freezer, and reheat them in the oven or air fryer whenever you need a quick breakfast. They come out just as good and honestly might be even better knowing breakfast is already done.

A Few Tips

Cook your sausage links first. Make sure they are fully cooked before wrapping them in the dough so everything finishes at the same time in the oven.

Don’t skip the close together placement. Placing them touching in the pan helps them rise up instead of spreading out. You want tall, fluffy biscuits wrapped around that sausage, not flat ones.
Freeze them for later. These freeze beautifully! Make a double batch and you have grab and go breakfasts ready for the whole month.

One biscuit recipe, endless possibilities. That is the beauty of having a really good base recipe in your back pocket.

…and that’s all we did today.
